In his kitchens, every chef uses vintage Japanese knives—a reflection of his belief that older, hand-forged blades offer a balance, sharpness, and soul modern tools cannot match. Determined to preserve this fading craftsmanship, he created Past Knife to share the beauty, history, and performance of authentic Japanese steel with chefs and collectors around the world.
